With over 10 years experience in food service as gelato chef, Pawel Petrykowski partnered with Pawel Bodzicki in 2016, already founder of Fabryka Lodow Naturalnych to create a full transparent , natural and creative gelato franchise in Poland : Paulo Gelateria. With its unique creations and customer experience in their first shop located in Gdansk, Poland, they have rapidly expanded their franchise to 7 shops, including 5 franchisees.
Chef Pawel Petrykowski is also a consultant and teacher, and travels the world sharing his passion and love for the gelato craft. He is also an ambassador for the Belgium Callebaut chocolate brand and has created in 2018 his very own signature chocolate recipe ‘Paulo Gelateria 75%’.
And in 2022, why Chicago?
When his wife received a job offer to move to Chicago from France in 2019, he did not hesitate to support and follow her as they embarked in their very own American dream. Since 2019, Chef Pawel Petrykowski has had the opportunity to assess the competitive landscape for the gelato and ice cream market, and is convinced there is a great potential for a premium natural, creative, ‘good for me’ and dairy-free, sugar balanced gelato creations.
